Ingredients

Instructions

  1. Prepare Baking Sheet: Line a baking sheet with parchment paper and set aside to prevent sticking and facilitate easy removal of frozen bars.
  2. Mix Yogurt Base: In a bowl, combine the plain Greek yogurt, smooth peanut butter, and maple syrup. Stir thoroughly until the mixture is smooth and uniform. Gently fold in the salted roasted peanuts to add texture.
  3. Shape Bars and Freeze: Scoop the yogurt mixture onto the parchment-lined baking sheet in four heaping ¼ cup portions, leaving space between each. Flatten each portion into rounds and insert a popsicle stick into each one, ensuring the stick is fully covered by the yogurt. Sprinkle additional peanuts on top if desired. Place the baking sheet in the freezer for at least 4 hours, or until bars are fully frozen.
  4. Melt Chocolate Coating: In a microwave-safe bowl, melt the dark chocolate and coconut oil together in 30-second increments, stirring well after each interval until smooth. Let the melted chocolate cool slightly before use to prevent melting the frozen bars.
  5. Remove Frozen Bars: Take the frozen yogurt bars from the freezer and carefully lift them off the parchment paper using a spatula if needed to avoid breaking them.
