Instructions
- Boil the potatoes: Bring a large pot of water to a boil and add the coarse salt. Add the halved baby potatoes and boil for 8–10 minutes, or until they are fork-tender but not falling apart. Drain the potatoes thoroughly and let them steam dry for 1 minute to remove excess moisture.
- Heat the skillet: Place a large non-stick skillet over medium-high heat. Add the olive oil and 2 tablespoons of the butter, allowing the butter to melt completely and blend with the oil.
- Pan-fry the potatoes: Arrange the boiled potatoes cut-side down in a single layer in the skillet. Cook without moving them for 4–5 minutes to develop a crisp, golden crust. Toss or flip the potatoes and continue cooking for another 4–5 minutes until all sides are crispy and golden brown.
- Add garlic flavor: Reduce the heat to medium-low and add the minced garlic and garlic powder. Stir continuously for 30–60 seconds until the garlic is fragrant but not browned, to prevent burning and ensure a flavorful taste.
- Finish with butter: Remove the skillet from the heat and add the remaining tablespoon of butter. Toss the potatoes gently until the butter melts and coats them evenly.
