Description
This Easy Skillet Lasagna is a quick and delicious one-pan meal that combines all the classic flavors of traditional lasagna with the convenience of a stovetop dish. Perfect for busy weeknights, it features tender lasagna noodles simmered in a rich tomato and beef sauce, topped with creamy ricotta and Parmesan cheeses.
Ingredients
Meat and Sauce
- 1 Tablespoon olive oil
- 1/2 medium onion, chopped
- 1 1/2 lbs ground beef
- 1 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/8 teaspoon crushed red pepper flakes
- 4 cups homemade or store-bought tomato sauce
- Pinch of salt and pepper
Pasta and Cheese
- 8 lasagna noodles, broken into 2-inch pieces
- 3/4 cup grated Parmesan cheese (divided)
- 1/2 cup ricotta cheese
Instructions
- Heat the aromatics: In a medium skillet set over medium heat, heat the olive oil. Add the chopped onions and cook, stirring occasionally, until they become translucent, about 3 minutes.
- Cook the beef: Add the ground beef to the skillet. Break it apart using a wooden spoon or spatula and cook until browned and cooked through. Drain off any excess fat to keep the dish from being greasy.
- Combine ingredients and simmer: Stir in the garlic powder, dried oregano, crushed red pepper flakes, tomato sauce, broken lasagna noodles, and a pinch of salt and pepper. Bring the mixture to a boil, then reduce heat to medium-low. Cover the skillet securely and let it cook until the noodles are soft, approximately 18 to 20 minutes.
- Finish with cheese: Remove the skillet from heat and stir in 1/2 cup of the grated Parmesan cheese. Top the dish with dollops of ricotta cheese and sprinkle the remaining 1/4 cup Parmesan cheese over the top. Serve warm.
Notes
- Breaking the lasagna noodles into smaller pieces helps them cook evenly in the skillet.
- For a spicier version, increase the crushed red pepper flakes to taste.
- You can substitute ground turkey or chicken for ground beef for a lighter version.
- Covering the skillet well during simmering is important to properly cook the noodles through.
- This dish can be garnished with fresh basil or parsley for extra freshness.
