Description

This Easy Strawberry Cake is a delightful, moist dessert combining the flavors of white cake mix and strawberry Jello with fresh pureed strawberries. Topped with a creamy whipped strawberry frosting made from cream cheese, Cool Whip, powdered sugar, and more strawberries, this cake is perfect for summer gatherings or any occasion craving a fruity, light cake.

Ingredients

Cake Ingredients

  • 1 box (15.25 oz) white cake mix
  • 1 box (3 oz) strawberry Jello powder
  • 3 large eggs
  • 1 cup pureed strawberries (fresh or thawed frozen)
  • 3/4 cup vegetable oil

Frosting Ingredients

  • 1 bar (8 oz) cream cheese, softened
  • 1 carton (8 oz) Cool Whip, thawed
  • 1/2 cup powdered sugar
  • 1/3 cup pureed strawberries (fresh or thawed frozen)

Instructions

  1. Preheat the Oven: Preheat your oven to 350℉ (175℃). Spray a 9×13 inch cake pan with nonstick cooking spray to prevent sticking and set it aside.
  2. Mix Cake Batter: In a large mixing bowl, combine the white cake mix, strawberry Jello powder, eggs, 1 cup pureed strawberries, and vegetable oil. Using an electric hand mixer or stand mixer with paddle attachment, beat on medium-low speed, increasing speed as needed, until the mixture is fluffy and well combined, about 1-2 minutes.
  3. Prepare Cake Pan: Evenly spread the strawberry cake batter into the prepared 9×13 pan, smoothing the top for even baking.
  4. Bake the Cake: Place the pan in the preheated oven and bake for 30-35 minutes. Check doneness by inserting a toothpick into the center— it should come out clean or with moist crumbs.
  5. Cool Completely: Remove the cake from the oven and transfer it to a wire cooling rack. Allow the cake to cool completely to room temperature before frosting.
  6. Make the Whipped Strawberry Frosting: In a large bowl, beat the softened cream cheese until creamy and lump-free. Add the thawed Cool Whip, powdered sugar, and 1/3 cup pureed strawberries. Beat on low speed until everything is well combined and fluffy.
  7. Frost the Cake: Use a spatula or icing spatula to evenly spread the whipped strawberry frosting over the cooled cake’s surface.
  8. Chill Before Serving: Cover the frosted cake pan with a lid or plastic wrap and refrigerate for several hours or overnight for the best flavor and texture. Avoid adding garnishes like whipped cream or sliced strawberries until just before serving.

Notes

  • Use fresh or thawed frozen strawberries for pureeing to get the best strawberry flavor in the cake and frosting.
  • Ensure the cream cheese is softened to room temperature for smooth frosting without lumps.
  • Refrigerating the cake overnight enhances the flavor and makes the cake moist and the frosting set perfectly.
  • Do not add garnishes until right before serving to maintain freshness.
