Description

This Egg Roll Bowl is a quick and flavorful stir-fry inspired by classic egg rolls, combining ground beef, crunchy coleslaw mix, and a savory-sweet sauce. Ready in just 15 minutes, it offers a delicious, low-carb alternative to traditional egg rolls without the wrapper, making it perfect for busy weeknights or a tasty lunch.

Ingredients

Protein & Vegetables

  • 1 tablespoon sesame oil
  • 1 pound ground beef
  • 5 cups coleslaw mix (divided)
  • 2 cups shredded carrots

Flavorings & Sauce

  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • 2 tablespoons soy sauce
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon hoisin or oyster sauce
  • ½ teaspoon sriracha (adjust to taste)

Garnishes

  • Sesame seeds
  • Sliced green onion
  • Crispy wonton strips (optional)

Instructions

  1. Heat sesame oil: In a large skillet, heat 1 tablespoon of sesame oil over medium heat to prepare for browning the beef.
  2. Brown the ground beef: Add 1 pound of ground beef to the skillet. Cook for about 5 minutes, stirring and crumbling the meat, until completely browned with no pink remaining.
  3. Mix sauce: In a small bowl, combine 2 tablespoons soy sauce, 2 tablespoons sweet chili sauce, 1 tablespoon rice vinegar, 1 tablespoon hoisin or oyster sauce, and ½ teaspoon sriracha to create the flavorful stir-fry sauce.
  4. Add vegetables and sauce: To the skillet, add 4 cups of the coleslaw mix, 2 cups shredded carrots, 1 teaspoon minced garlic, 1 teaspoon grated ginger, and the prepared sauce mixture. Stir well to combine all ingredients.
  5. Cook vegetables: Continue cooking for approximately 2 minutes, just until the vegetables are warmed through but still retain their crispness.
  6. Finish with coleslaw: Remove the skillet from heat, then stir in the remaining 1 cup of coleslaw mix to add extra crunch and freshness.
  7. Garnish and serve: Sprinkle with sesame seeds and sliced green onions. Add crispy wonton strips on top if desired for extra texture and flavor. Serve immediately.

Notes

  • For a vegetarian version, substitute ground beef with crumbled firm tofu or plant-based ground meat.
  • Adjust sriracha quantity according to your heat preference or omit for a milder dish.
  • Crispy wonton strips add texture but can be omitted for a gluten-free option.
  • Leftovers can be refrigerated for up to 3 days and reheated on the stovetop or microwave.
