Instructions
- Make the Everything Bagel Seasoning: Combine poppy seeds, white sesame seeds, black sesame seeds, dried garlic, dried onion, and flaked sea salt in a small bowl and set aside.
- Preheat the Oven: Heat your oven to 500°F (260°C) and set a baker’s half sheet pan to the side.
- Shape the Dough: Roll or hand-stretch the pizza dough. For a classic pie shape with a thicker crust, hand-stretch the dough by rubbing olive oil onto your hands to prevent tearing. Flatten the dough into a disk and gently stretch it outward with your fingertips, rotating until you achieve the preferred size. If using a rolling pin, roll the dough between two parchment sheets or use flour to prevent sticking. Transfer the shaped dough to the prepared baking sheet on parchment paper.
- Dock the Dough: Using a fork or docking roller, prick the surface of the dough evenly to prevent large bubbles from forming during baking.
- Season and Oil the Crust: Brush the dough lightly with olive oil. Sprinkle the outer edge of the dough with the reserved everything bagel seasoning to create the signature flavored crust.
- Bake the Pizza Crust: Place the dough in the preheated oven and bake for 12 to 15 minutes or until the crust turns a light golden brown and is evenly cooked. Remove and set aside to cool.
- Prepare Whipped Dill Cream Cheese: In a medium bowl, whip the softened cream cheese with a hand mixer until soft and fluffy. Add chopped fresh dill and cracked black pepper toward the end and mix until combined.
- Assemble the Pizza: Once the crust is cooled, spread the whipped dill cream cheese evenly over the dough within the seasoned edge. Top with cold-smoked salmon slices, tomato slices, cucumber ribbons, and capers.
- Garnish and Serve: Add a final sprinkle of fresh dill, flaked sea salt, and cracked black pepper on top as desired. Slice and serve immediately, or chill in the refrigerator to enjoy cold.
