Description

Indulge in these decadent Ferrero Rocher Brownies, a rich and fudgy treat layered with Nutella and embedded with whole Ferrero Rocher candies. With a perfect balance of chocolatey brownie and creamy hazelnut, these brownies are sure to delight anyone with a sweet tooth. They feature a soft, gooey center surrounded by a slightly firm edge, baked to perfection in a single 8×8 inch pan.

Ingredients

Dry Ingredients

  • 1½ cups granulated sugar (300g)
  • 1 cup all-purpose flour (120g)
  • ⅔ cup dutch-processed cocoa powder (56g)
  • ½ cup powdered sugar (60g)
  • ¾ teaspoons kosher salt

Wet Ingredients

  • 2 large eggs (room temperature)
  • ½ cup canola oil (120ml)
  • 2 tablespoons water (30ml)

Chocolate & Layers

  • ½ cup semi-sweet chocolate (2oz), chopped
  • ½ cup Nutella (143g)
  • 16 Ferrero Rocher candies

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 325°F. Lightly spray an 8×8 inch baking dish with cooking spray and line it with two pieces of parchment paper, allowing you to easily lift out the brownies after baking.
  2. Combine Dry Ingredients: In a medium bowl, whisk together the granulated sugar, all-purpose flour, dutch-processed cocoa powder, powdered sugar, and kosher salt until well combined.
  3. Mix Wet Ingredients: Using a stand mixer or hand mixer, whisk the eggs, canola oil, and water on medium-high speed for about 2 minutes until they are smooth and well blended.
  4. Incorporate Dry Ingredients and Chocolate: Add the dry ingredients and the chopped semi-sweet chocolate to the wet mixture and gently fold in by hand until just combined, being careful not to overmix to preserve the brownies’ tender texture.
  5. Layer the Batter: Pour half of the batter into the prepared pan and spread it evenly using a spatula.
  6. Add Nutella Layer: Melt the Nutella in the microwave for approximately 20 seconds until it softens. Spread this layer evenly over the first brownie batter layer.
  7. Place Ferrero Rocher Candies: Unwrap all 16 Ferrero Rocher candies and arrange them evenly in a 4×4 grid on top of the Nutella layer, gently pressing them into the batter.
  8. Add Remaining Batter: Spoon the remaining brownie batter over the candies. Use a spatula to carefully spread it, filling in the spaces between the chocolates. This layer will be thin, so patience is necessary to cover the entire surface without displacing the candies.
  9. Bake the Brownies: Bake in the preheated oven for 45 to 60 minutes, or until the edges are set but the center still looks slightly soft and fudgy.
  10. Cool and Serve: Allow the brownies to cool completely in the pan before lifting out using the parchment paper and slicing into 16 squares for serving.

Notes

  • Ensure eggs are at room temperature for better mixing and texture.
  • Do not overmix the batter once dry ingredients are added to avoid tough brownies.
  • Nutella should be softened slightly to spread evenly without melting.
  • Use parchment paper to easily remove brownies from the pan.
  • Cooling completely before slicing helps retain brownie shape and texture.
