Ingredients
Egg Mixture
- 8 eggs
- 1/2 cup ricotta cheese (part skim)
- 1/4 cup milk (any kind)
Vegetables & Seasonings
- 1/4 cup green bell pepper, diced
- 1/4 cup red bell pepper, diced
- 1/4 cup onion, diced
- 1 tsp sea salt
- 1/2 tsp garlic powder
- Black pepper, to top (optional)

Instructions
- Cream Ricotta and Milk: Preheat your oven to 350°F (177°C). In a small bowl, whisk together the ricotta cheese and milk until you achieve a creamy and slightly thick consistency. Set this mixture aside as it will add a rich texture to the egg bites.
- Whisk Eggs: In a separate large bowl, whisk the eggs thoroughly until the yolks and whites are fully combined and slightly frothy, which will help make the egg bites fluffy.
- Fold Mixtures Together: Add the ricotta and milk mixture to the whisked eggs. Then incorporate the diced green and red bell peppers and onion. Sprinkle in the sea salt and garlic powder, folding gently to evenly distribute all ingredients without deflating the eggs.
- Prepare Muffin Tin and Bake: Grease a muffin tin well with oil to prevent sticking. Pour the egg mixture into each cavity, filling them nearly to the top. Place the tin in the preheated oven and bake for 10 to 12 minutes until the egg bites are puffed up and set but still slightly tender to the touch.
- Cool and Serve: Remove the muffin tin from the oven and let the egg bites cool slightly. Run a knife around the edges of each cavity to loosen the bites and gently remove them. Optionally, top with freshly cracked black pepper before serving to enhance flavor.
