Description

A simple and delicious recipe for fried potatoes and onions, featuring tender Yukon Gold potatoes sautéed with sweet onions, seasoned with paprika and fresh parsley. Perfect as a comforting side dish that is easy to prepare in under 40 minutes.

Ingredients

Vegetables

  • 2 lbs Yukon Gold potatoes (peeled and thinly sliced)
  • 1 large sweet onion (thinly sliced)

Seasonings & Fats

  • ¼ cup unsalted butter
  • ½ tsp salt (plus more to taste)
  • ¼ tsp black pepper
  • ½ tsp paprika
  • 1 tbsp chopped fresh parsley (optional, for garnish)

Instructions

  1. Melt Butter: Melt the butter in a large skillet over medium heat, ensuring it coats the base for even cooking.
  2. Cook Potatoes: Add the thinly sliced potatoes in an even layer inside the skillet. Cook for 10 minutes, stirring occasionally to prevent sticking, until the potatoes begin to soften.
  3. Add Onions and Seasonings: Add the thinly sliced sweet onions along with salt, black pepper, and paprika. Stir gently to combine all ingredients without breaking the potatoes.
  4. Cover and Cook: Cover the skillet with a lid and cook for 8 to 10 minutes, stirring once or twice halfway through. This allows the potatoes to become tender and the onions to soften and caramelize slightly.
  5. Uncover and Finish Cooking: Remove the lid and continue cooking for another 3 to 5 minutes, stirring occasionally to let any excess moisture evaporate and to get a slight crisp on the edges.
  6. Adjust Seasoning and Garnish: Taste the fried potatoes and onions, adjusting salt if needed. Sprinkle the chopped fresh parsley over the dish before serving for a bright, fresh finish.

Notes

  • For extra crispiness, do not overcrowd the skillet; cook in batches if necessary.
  • You can substitute butter with olive oil for a slightly different flavor profile.
  • Use a non-stick or well-seasoned cast iron skillet to prevent sticking.
  • Leftovers can be reheated gently in a skillet or microwave.
  • Adding a splash of garlic powder or smoked paprika can elevate the flavors.
