Description
Fromage Fort is a traditional French cheese spread made by blending leftover cheeses with butter, garlic, fresh herbs, and white wine. Perfect as an appetizer, it can be served chunky or smooth and pairs wonderfully with crackers, breadsticks, or toasted bread.
Ingredients
Cheese Blend
- 1 lb cheese (cut into 1” chunks, use a mix of soft and hard cheeses if possible)
Additional Ingredients
- 1-2 tablespoons salted butter (optional, recommended if not using soft cheeses)
- 1 clove garlic (grated, optional)
- 1-2 tablespoons fresh herbs (roughly chopped: parsley, chives, rosemary, thyme, dill)
- ½ cup dry white wine
- Salt and pepper (to taste)
Instructions
- Combine Ingredients: Add the cheese chunks, salted butter, grated garlic, fresh herbs, and white wine into the bowl of a food processor. This mixture forms the base of your fromage fort.
- Pulse to Desired Texture: Pulse the ingredients in the food processor to break them down. Continue pulsing until you reach your preferred consistency — either keep it a bit chunky or process until very smooth. Taste and add salt and pepper as needed, then pulse again briefly to incorporate the seasoning.
- Serve: Transfer the fromage fort to a serving bowl and allow it to come to room temperature. Serve alongside crackers, grissini, breadsticks, or slices of bread. Optionally, spread it on bakery bread slices and broil until melty for a warm, savory treat.
Notes
- Use a variety of cheeses for more complex flavors, combining hard and soft cheeses such as Gruyère, Camembert, Parmesan, and blue cheese.
- Adjust the amount of garlic and herbs to your taste preference.
- If you prefer a tangier flavor, try adding a splash of vinegar or lemon juice instead of white wine.
