Description

This Frozen Burrito Casserole is a quick and comforting meal perfect for busy weeknights. Layers of frozen burritos baked with rich red enchilada sauce and melted Mexican blend cheese create a hearty and flavorful dish that’s easy to prepare. Serve with sour cream, salsa, and fresh cilantro for a delicious Tex-Mex twist everyone will enjoy.

Ingredients

Frozen Burritos

  • 8 frozen burritos (any variety), unwrapped

Sauce & Cheese

  • 2 cans (10 oz each) red enchilada sauce
  • 2 cups shredded Mexican blend cheese

Toppings (Optional)

  • Sour cream, for serving
  • Salsa, for serving
  • Fresh cilantro, for garnish

Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Arrange Burritos: Place six unwrapped frozen burritos side-by-side in a single row inside the prepared baking dish. Then, fit the remaining two burritos sideways to fill the dish evenly without gaps.
  3. Add Sauce: Pour the red enchilada sauce evenly over the arranged burritos, making sure to coat each burrito thoroughly for maximum flavor.
  4. Bake Covered: Cover the baking dish with foil and bake in the preheated oven for 30 minutes to heat the burritos through completely.
  5. Add Cheese: Remove the foil and sprinkle the shredded Mexican blend cheese evenly over the top of the burritos.
  6. Bake Uncovered: Return the dish to the oven and bake uncovered for an additional 5 minutes or until the cheese is fully melted and bubbly.
  7. Serve & Garnish: Spoon servings onto plates and top with sour cream, salsa, and fresh cilantro, if desired. Serve warm for best taste.

Notes

  • You can use any variety of frozen burritos based on your preference (bean, beef, chicken, or vegetarian).
  • For extra heat, use a spicy enchilada sauce or add jalapeños as a topping.
  • Make sure burritos are adequately thawed if preferred, but this recipe works well straight from frozen.
  • Leftovers can be refrigerated and reheated covered in the oven or microwave.
  • To reduce calories, use reduced-fat cheese and low-sodium enchilada sauce.
