Instructions

  1. Blend: In a blender or food processor, combine cottage cheese, honey, and peanut butter. Blend until the mixture is smooth and creamy.
  2. Spread: Line a rimmed baking sheet with parchment paper. Pour the blended mixture onto the sheet and spread it evenly into a rectangular shape about ¼ inch thick using a spatula or spoon.
  3. Swirl Chocolate: Melt the chocolate chips. Add teaspoon-size dollops of melted chocolate onto the cottage cheese layer. Use a knife to gently swirl the chocolate around to create a marbled effect.
  4. Add Granola and Freeze: Sprinkle granola evenly over the top. Place the baking sheet in the freezer for approximately 3 hours or until the mixture is firm.
  5. Break into Pieces: Once firm, cut or break the bark into 16 to 20 pieces for serving.
  6. Store: Store any leftover bark in a sealed freezer bag or airtight container for up to 3 months in the freezer.
