Description
This Frozen Cottage Cheese Bark is a delicious and healthy frozen treat made with blended cottage cheese, honey, and peanut butter, topped with swirled chocolate and crunchy granola. It’s easy to prepare and perfect for a refreshing snack or dessert.
Ingredients
Main Ingredients
- 2 cups (16 oz) cottage cheese (Good Culture whole milk recommended)
- 2 tablespoons honey
- 2 tablespoons peanut butter
Toppings
- 3 tablespoons chocolate chips (Lily’s chocolate chips used)
- 3 tablespoons granola of choice
Instructions
- Blend: In a blender or food processor, combine cottage cheese, honey, and peanut butter. Blend until the mixture is smooth and creamy.
- Spread: Line a rimmed baking sheet with parchment paper. Pour the blended mixture onto the sheet and spread it evenly into a rectangular shape about ¼ inch thick using a spatula or spoon.
- Swirl Chocolate: Melt the chocolate chips. Add teaspoon-size dollops of melted chocolate onto the cottage cheese layer. Use a knife to gently swirl the chocolate around to create a marbled effect.
- Add Granola and Freeze: Sprinkle granola evenly over the top. Place the baking sheet in the freezer for approximately 3 hours or until the mixture is firm.
- Break into Pieces: Once firm, cut or break the bark into 16 to 20 pieces for serving.
- Store: Store any leftover bark in a sealed freezer bag or airtight container for up to 3 months in the freezer.
Notes
- Use whole milk cottage cheese for creamier texture and better flavor.
- Adjust the thickness of the bark by spreading thinner or thicker before freezing.
- You can substitute honey with maple syrup or agave nectar if preferred.
- Choose your favorite granola for added crunch and flavor variety.
- Keep the bark well sealed in the freezer to avoid freezer burn or absorption of other odors.
