Granola

  • 3/4 cup granola (homemade or store-bought)

Fruit and Yogurt Mixture

  • 1 1/4 cups Greek vanilla yogurt (preferably low sugar)
  • 1 1/2 cups mixed berries, larger pieces diced


Instructions

  1. Prepare the muffin pan: Line a 12-cup regular-sized muffin pan with 12 silicone baking cups or muffin liners to prevent sticking.
  2. Add granola base: Spoon about 2 teaspoons of granola into the bottom of each silicone cup. Set the pan aside while preparing the next layers.
  3. Mash berries: In a medium bowl, take 3/4 cup of the mixed berries and mash them gently using a fork or potato masher until slightly broken down but still chunky. This creates a flavorful base.
  4. Combine yogurt and berries: Fold the mashed berries into 1 1/4 cups of Greek vanilla yogurt until they are well combined, creating a creamy, fruity mixture.
  5. Layer yogurt mixture: Spoon approximately 2 tablespoons of the yogurt and fruit mixture into each granola-lined cup. Use a spatula to smooth the surface, then tap the pan gently on the counter to press layers evenly.
  6. Add more granola: Sprinkle about 1 teaspoon of granola on top of the yogurt layer in each cup, adding a crunchy texture.
  7. Top with berries: Press the remaining mixed berries into the top of each cup, using a few berries per cup for visual appeal and extra flavor.
  8. Freeze: Place the muffin pan in the freezer and chill for 2 to 4 hours or until the bites are firm and fully frozen.
  9. Serve: Once frozen, carefully pop each frozen yogurt bite out of the silicone mold. Allow them to sit at room temperature for about 10 minutes to soften slightly for easier eating and enhanced flavor. Enjoy immediately.
