Description

This Frozen Yogurt Bark is a quick, refreshing, and healthy treat perfect for warm days or a nutritious snack. Combining creamy vanilla Greek yogurt with vibrant raspberry chia jam and crunchy granola, it offers a delightful texture contrast and natural sweetness without added artificial ingredients. Ready in just 10 minutes and frozen to set, it’s a simple make-ahead dessert or snack you can enjoy anytime.

Ingredients

Main Ingredients

  • 2 cups Vanilla Greek Yogurt
  • 1 cup Frozen raspberries
  • 1 tbsp Real maple syrup
  • 1/4 cup chia seeds
  • 3-4 tbsp Water
  • 1/2 cup Granola (for garnish)

Instructions

  1. Prepare pan: Line a large sheet pan with parchment paper to prevent sticking and allow for easy removal of the yogurt bark later. Pour the vanilla Greek yogurt into a large mixing bowl and set aside.
  2. Make raspberry jam: In a high-powered blender, combine frozen raspberries, maple syrup, chia seeds, and 3 tablespoons of water. Blend until smooth, resembling a jam consistency. Add additional water, if needed, to achieve a spreadable texture.
  3. Combine and spread: Stir the raspberry jam mixture into the Greek yogurt until fully combined and smooth. Pour the mixture into the prepared sheet pan and spread evenly to form a layer about 1/2 to 3/4 inch thick. Sprinkle granola evenly over the top for added crunch.
  4. Freeze and set: Place the sheet pan into the freezer and allow the yogurt bark to harden for 1 to 2 hours. Once firm, remove from the freezer and use a sharp knife to cut the bark into bite-sized pieces.
  5. Store properly: Transfer the cut yogurt bark pieces into an airtight container or resealable freezer bag. Keep frozen until ready to serve to prevent melting and maintain texture.

Notes

  • You can customize the granola topping or substitute with nuts or seeds for variation.
  • If you prefer a sweeter bark, add a bit more maple syrup or your favorite natural sweetener.
  • Use Greek yogurt for its thick texture and protein content, but regular yogurt can also work if strained slightly.
  • Let the bark sit out only briefly before serving to avoid melting.
  • Use frozen raspberries to keep the mixture cold and aid in thickening when blended with chia seeds.
