  • 6 frozen mini waffles
  • 1 pint strawberries
  • 20 ounces pineapple tidbits
  • 1/4 cup orange juice
  • 6 tablespoons sugar (divided: 4 tablespoons + 2 tablespoons)
  • 2 teaspoons vanilla extract (divided: 1 teaspoon + 1 teaspoon)

Whipped Cream Mixture

  • 1 cup heavy whipping cream
  • 4 ounces Greek yogurt
  • Honey for drizzling


Instructions

  1. Toast Waffles: Toast the frozen mini waffles according to the package instructions. Once toasted, cut 2 waffles in half and the remaining 4 waffles into quarters or smaller pieces to prepare for layering.
  2. Prepare Fruit Mixture: Drain the pineapple tidbits thoroughly. Remove the tops from the strawberries and quarter them. In a bowl, combine the pineapple, strawberries, orange juice, 4 tablespoons of sugar, and 1 teaspoon of vanilla extract. Toss everything together and allow the mixture to sit so the strawberries can release their juices, enhancing the flavor.
  3. Make Whipped Cream Mixture: Using a stand mixer or a hand mixer in a glass bowl, beat the heavy whipping cream on high speed for 2 to 3 minutes until stiff peaks form. Add the remaining 2 tablespoons of sugar, 1 teaspoon vanilla extract, and Greek yogurt. Gently fold these ingredients into the whipped cream with a spatula until well combined, creating a creamy, tangy topping.
  4. Assemble Parfaits: In four 8-ounce glasses, start by placing a layer of waffle pieces at the bottom, followed by a layer of the whipped cream mixture, and then a layer of the prepared fruit. Repeat the layering process until the glasses are filled.
  5. Garnish Parfaits: Cut a small slice into the bottom of the waffle halves and press them against the sides of each glass to create an attractive visual border. Place a whole strawberry next to each waffle slice. Finish each parfait with a final dollop of the whipped cream mixture on top and drizzle honey over it for added sweetness and shine.
