Ingredients

Chocolate Mixture

  • ¾ cup unsalted butter
  • ½ cup Dutch process cocoa powder
  • 4 oz dark chocolate, chopped

Wet Ingredients

  • 3 large eggs, cold
  • 1 cup granulated sugar
  • ½ cup light brown sugar
  • 1 teaspoon vanilla extract

Dry Ingredients

  • ½ cup all purpose flour
  • 1 teaspoon kosher salt
  • 1 teaspoon espresso powder

  • 1 cup mini M&Ms


Instructions

  1. Preheat and prepare pan: Preheat your oven to 350℉ (180℃) and line an 8×8 inch baking pan with foil for easy removal of the brownies later.
  2. Melt butter and combine with cocoa: Melt the butter in a medium bowl using the microwave until hot. Whisk in the Dutch process cocoa powder until smooth to bloom the cocoa and deepen the chocolate flavor.
  3. Add chopped chocolate: Stir the chopped dark chocolate into the hot butter and cocoa mixture and let sit for 1-2 minutes. Whisk until the chocolate is fully melted and smooth.
  4. Whisk eggs and sugars: In a separate bowl, whisk together the cold eggs, granulated sugar, and light brown sugar vigorously for 1.5 to 2 minutes until the mixture lightens in color and bubbles form on the surface.
  5. Combine chocolate and sugar mixtures: When the chocolate mixture has cooled slightly but is not hardened, pour the egg and sugar mixture into it. Whisk until fully combined and smooth, then add vanilla extract and stir through.
  6. Fold in dry ingredients: Using a rubber spatula, gently fold in the all-purpose flour, kosher salt, and espresso powder until just incorporated, being careful not to overmix.
  7. Add mini M&Ms: Stir in the mini M&Ms evenly through the batter for bursts of candy color and flavor.
  8. Pour batter and bake: Pour the batter into the prepared pan, smoothing the top. Optional: sprinkle extra mini M&Ms on top for decoration. Bake in the preheated oven for 26-30 minutes until a toothpick inserted comes out with moist crumbs but not wet batter.
  9. Cool and chill for fudgy texture: Allow the brownies to cool completely in the pan. For an even fudgier texture, refrigerate the cooled brownies for a few hours before slicing and serving.
