Description
This Garlic Mashed Red Potatoes recipe offers a creamy, flavorful side dish perfect for any meal. Made with tender boiled red potatoes blended with garlic, Greek yogurt, butter, and half & half, it’s a comforting twist on classic mashed potatoes with a rich, tangy creaminess and a hint of garlic.
Ingredients
Potatoes
- 3 pounds red potatoes (about 12 medium red potatoes, scrubbed well)
Dairy and Flavorings
- 4 tablespoons unsalted butter (cubed)
- 4 small-medium garlic cloves (minced; use 6 for more flavor)
- ⅓ cup Greek yogurt (2% or full fat for best flavor)
- ½ cup half & half (divided)
- 1 teaspoon kosher salt (to taste)
Instructions
- Boil Potatoes: Bring a large pot of water to a rolling boil. While waiting, chop the scrubbed red potatoes into quarters. Carefully add the potatoes to the boiling water and reduce heat to medium. Boil for 20-25 minutes or until the potatoes are tender and easily pierced with a fork. Drain the potatoes and remove the pot from heat.
- Mash Potatoes: Return the drained potatoes to the same pot. Add cubed butter, minced garlic, Greek yogurt, ¼ cup of the half & half, and kosher salt. Using a potato masher, mash the potatoes to your desired consistency. Once mostly mashed, add the remaining ¼ cup of half & half and mix thoroughly. For an extra smooth texture, use a handheld electric mixer at this stage.
- Serve: Transfer the mashed potatoes to a serving dish. Optionally, top with extra butter, freshly chopped parsley, or a sprinkle of parmesan cheese. Serve warm as a delicious side dish.
Notes
- For creamier mashed potatoes, use full-fat Greek yogurt and whole half & half.
- Adjust salt according to taste and dietary needs.
- Using an electric mixer will yield smoother mashed potatoes but avoid overmixing to prevent a gluey texture.
- Red potatoes are ideal for boiling because they hold their shape well and have a creamy texture.
- Leftovers can be refrigerated for up to 3 days and reheated gently on stovetop or microwave.
