Ingredients

Potatoes

  • 3 pounds red potatoes (about 12 medium red potatoes, scrubbed well)

Dairy and Flavorings

  • 4 tablespoons unsalted butter (cubed)
  • 4 small-medium garlic cloves (minced; use 6 for more flavor)
  • ⅓ cup Greek yogurt (2% or full fat for best flavor)
  • ½ cup half & half (divided)
  • 1 teaspoon kosher salt (to taste)


Instructions

  1. Boil Potatoes: Bring a large pot of water to a rolling boil. While waiting, chop the scrubbed red potatoes into quarters. Carefully add the potatoes to the boiling water and reduce heat to medium. Boil for 20-25 minutes or until the potatoes are tender and easily pierced with a fork. Drain the potatoes and remove the pot from heat.
  2. Mash Potatoes: Return the drained potatoes to the same pot. Add cubed butter, minced garlic, Greek yogurt, ¼ cup of the half & half, and kosher salt. Using a potato masher, mash the potatoes to your desired consistency. Once mostly mashed, add the remaining ¼ cup of half & half and mix thoroughly. For an extra smooth texture, use a handheld electric mixer at this stage.
  3. Serve: Transfer the mashed potatoes to a serving dish. Optionally, top with extra butter, freshly chopped parsley, or a sprinkle of parmesan cheese. Serve warm as a delicious side dish.
