Description
These classic German waffles are light, crispy on the outside, and tender on the inside, perfect for breakfast or brunch. Made with simple ingredients like flour, butter, sugar, and eggs, they can be quickly whipped up using a waffle maker. Serve them fresh with your favorite toppings such as fruit, syrup, or whipped cream for a delicious homemade treat.
Ingredients
Dry Ingredients
- 2 3/4 cups (350 g) unbleached all-purpose flour
- 4 teaspoons baking powder (or 1 sachet Dr. Oetker baking powder)
Wet Ingredients
- 3/4 cup (170 g) butter, softened (1 1/2 sticks)
- 3/4 cup (150 g) organic cane sugar
- 3 eggs, at room temperature
- 1 teaspoon vanilla extract
- 2 cups water, at room temperature
Instructions
- Combine dry ingredients: In a medium bowl, whisk together the flour and baking powder thoroughly and set aside.
- Cream butter and sugar: Using a stand mixer or hand mixer on medium-high speed, beat the softened butter and sugar together until the mixture is light and fluffy, which usually takes a few minutes.
- Beat in the eggs and vanilla: Add the eggs one at a time to the butter-sugar mixture, beating well after each addition. Stop occasionally to scrape down the sides of the bowl to ensure even mixing. Then add the vanilla extract and mix to combine fully.
- Mix together batter: Gradually add the flour mixture and water to the wet ingredients, mixing on low speed just until the batter is smooth and homogenous.
- Cook waffles: Preheat your waffle maker according to the manufacturer’s instructions. Scoop the batter into the preheated waffle maker and cook until the waffles are golden brown and crisp, typically a few minutes depending on your appliance.
- Serve: Serve the waffles immediately for the best texture. Alternatively, to keep waffles warm and crispy while cooking the remaining batter, place them in a 200°F (90°C) oven directly on the oven rack or on a baking sheet with a wire rack. Do not stack waffles together; arrange them in a single layer so air can circulate to maintain crispness.
Notes
- Use unbleached all-purpose flour for best texture and flavor.
- Ensure butter is softened to room temperature for easier creaming with sugar.
- Do not stack waffles after cooking as it will make them soggy; keep them separated in a warm oven instead.
- If you don’t have a stand mixer, a hand mixer with a large bowl works fine.
- Room temperature ingredients help the batter mix more evenly and rise better.
- You can customize toppings such as fresh berries, whipped cream, syrup, or powdered sugar.
