Ingredients

Salmon

  • 4 salmon filets (6 oz each)
  • Olive oil for cooking salmon

Peach Glaze

  • 2 large peaches, pitted (skin on or off)
  • 1 Tbsp fresh ginger (or 1 tsp ground ginger)
  • ½ lemon, juiced (approx. 2 Tbsp)
  • 1 Tbsp honey (or agave syrup)
  • 1 Tbsp water
  • 2 tsp coconut aminos (or soy sauce)
  • ¼ tsp sea salt


Instructions

  1. Dry: Pat the salmon filets dry thoroughly with a paper towel and place them on a shallow plate or bowl to prepare for marination.
  2. Combine: Add the pitted peaches, fresh ginger, lemon juice, honey, water, coconut aminos, and sea salt into a food processor or high-speed blender. Blend until the mixture is combined but still has some small chunks for texture.
  3. Marinate: Reserve about ⅓ cup of the peach glaze in a separate container. Pour the remaining glaze over the salmon filets, ensuring they are well coated. Cover and refrigerate the salmon to marinate for at least 20 minutes.
  4. Cook: Heat a large skillet over medium-high heat and add olive oil. When the oil shimmers, place the salmon filets skin side down carefully. Cook without moving them for 3 to 4 minutes depending on thickness. If edges curl, press down firmly with a spatula. Flip the filets when roughly ⅔ of the salmon appears opaque. Cook the other side for 1 to 2 minutes until the salmon is fully opaque and reaches an internal temperature of around 130°F. Use tongs to transfer the salmon to a plate and let it rest briefly.
  5. Serve: Spoon the reserved peach glaze over the salmon filets just before serving. Pair the dish with your favorite side, like an avocado salad, for a fresh and balanced meal.
