Description

Glorified Rice is a delightful and refreshing dessert salad combining the chewy texture of cooled white rice with the creamy sweetness of Cool Whip. Enhanced by the tropical burst of crushed pineapple, mandarin oranges, maraschino cherries, and fluffy mini marshmallows, this chilled treat is perfect for gatherings and potlucks, delivering a perfect balance of fruity flavors and creamy texture.

Ingredients

Base

  • 2 cups cooked white rice (cooled)

Dressing

  • 1 container Cool Whip (1L/16oz container, about 4 cups, thawed)

Fruits & Mix-ins

  • 1 can crushed pineapple (540ml/20oz can, about 1 ¼ cups, well drained)
  • ½ cup mandarin oranges (well drained)
  • ½ cup maraschino cherries (halved and patted dry)
  • 1 cup mini marshmallows

Instructions

  1. Prepare Rice: In a large bowl, add the cooled cooked white rice. Use a fork to gently break up any clumps so the rice is evenly separated and fluffy.
  2. Add Cool Whip: Fold the thawed Cool Whip into the rice carefully, ensuring it is well combined to coat the rice evenly without crushing the grains.
  3. Add Fruits and Marshmallows: Gently fold in the well-drained crushed pineapple, mandarin oranges, halved and dried maraschino cherries, and mini marshmallows. Mix carefully to distribute the ingredients without mashing the fruit.
  4. Chill: Cover the bowl tightly and refrigerate for at least 2 hours. This chilling time allows the flavors to meld and the salad to set into a refreshing dessert.
  5. Serve: Before serving, stir the mixture lightly to redistribute any settled ingredients. Serve cold for the best texture and taste.

Notes

  • Ensure fruit is well drained to avoid excess liquid which can make the salad watery.
  • For variation, you can substitute or add other fruits like diced apples or grapes.
  • Use chilled cooked rice for best texture and to prevent melting the Cool Whip.
  • This salad tastes best after being chilled overnight.
  • Marshmallows add sweetness and fun texture but can be reduced or omitted if desired.
