Batter

Apple Mixture Cooking

  • ¼ cup coconut sugar
  • ½ cup butter or vegan butter

Topping

  • 2 tbsp coconut sugar
  • ½ tsp cinnamon
  • 4 tbsp gluten free oats


Instructions

  1. Preheat Oven: Preheat your oven to 360°F (180°C) to prepare for baking the cake.
  2. Prepare Apples: Peel, core, and slice the apples into even pieces and set them aside for cooking.
  3. Mix Batter: In a medium bowl, whisk together the gluten-free flour blend, baking powder, 4 tablespoons of coconut sugar, eggs or vegan egg replacer, unsweetened almond milk, and vanilla extract until smooth.
  4. Cook Apple Mixture: Heat a saucepan over medium heat. Add the sliced apples, lemon juice, raisins, 1 teaspoon cinnamon, nutmeg, ¼ cup coconut sugar, and butter or vegan butter. Stir continuously until the butter and sugar melt and the mixture starts to bubble. Cook for an additional 3 minutes while stirring, then remove from heat.
  5. Prepare Baking Dish: Spray a 10-inch by 7-inch baking dish with oil to prevent sticking.
  6. Assemble Cake: Spread the cooked apple mixture evenly on the base of the baking dish, then pour the batter evenly over the top.
  7. Make Topping: In a small bowl, combine 2 tablespoons coconut sugar, ½ teaspoon cinnamon, and 4 tablespoons gluten-free oats. Sprinkle this topping evenly over the batter layer.
  8. Bake: Place the baking dish in the oven and bake for 25 minutes, or until the cake is cooked through and the topping is golden.
