These Granola Yogurt Bars are a delicious and healthy no-bake treat combining a crunchy peanut butter oat base with a creamy, sweetened vanilla Greek yogurt topping swirled with fruit jam and fresh mixed berries. Ingredients
Granola Base
- 2 cups rolled oats
- 1/2 cup natural peanut butter
- 1/3 cup maple syrup

Yogurt Layer
- 2 cups vanilla Greek yogurt (use full-fat for the best texture)

Instructions
- Prepare the Pan: Line an 8×8 or 9×9 inch square baking pan with parchment paper or wax paper to ensure easy removal of the bars later.
- Make the Granola Base: In a mixing bowl, combine 1/2 cup creamy peanut butter, 1 tablespoon vanilla extract, 1/3 cup maple syrup, 2 cups rolled oats, 1 teaspoon cinnamon, and 1/2 teaspoon kosher salt. Mix thoroughly until the mixture clumps together. Press this granola mixture evenly into the prepared baking pan, then place it in the freezer for a short time to firm up.
- Prepare the Yogurt Layer: In a separate large bowl, mix 2 cups vanilla Greek yogurt with 2 tablespoons maple syrup and 1 teaspoon vanilla extract. Adjust sweetness according to your taste. Spread the yogurt layer evenly over the chilled granola base using a rubber or offset spatula.
- Add Toppings and Swirl Jam: Dot 2 tablespoons of fruit jam in small dollops over the yogurt layer. Use a toothpick to swirl the jam gently creating a decorative pattern. Then, sprinkle the mixed berries evenly on top.
- Freeze the Bars: Place the prepared pan in the freezer for 3 to 4 hours until the bars are completely firm and frozen solid. Once frozen, remove the bars from the pan using the parchment paper and cut them into 9 to 12 pieces.
- Storage and Serving: Store the bars in an airtight container in the freezer for up to 1-2 months, separating layers with parchment paper to prevent sticking. Before serving, let the bars sit at room temperature for about 30 minutes to soften for easier enjoyment.
