Ingredients

For the Quesadillas

  • 8 (8 inch) flour tortillas
  • 1/2 cup kalamata olives, chopped
  • 1/2 cup roasted red peppers, drained and chopped
  • 1 cup crumbled Feta cheese
  • 2 cups shredded chicken
  • 3 cups mozzarella, shredded
  • Fresh dill, chopped (for sprinkling)

For the Tzatziki Sauce

  • 1 cup plain Greek yogurt
  • 1/2 cup cucumber, finely chopped
  • 1 tablespoon fresh dill, chopped
  • 2 teaspoons lemon juice
  • Salt and freshly cracked black pepper, to taste


Instructions

  1. Prepare the Tzatziki Sauce: In a small bowl, stir together the Greek yogurt, finely chopped cucumber, fresh dill, and lemon juice. Season with salt and freshly cracked black pepper to taste. Refrigerate the sauce while you prepare the quesadillas to allow the flavors to meld beautifully.
  2. Preheat the Oven: Set your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and for easier cleanup.
  3. Assemble the Quesadillas: Place two flour tortillas on the prepared baking sheet. On one tortilla, evenly layer mozzarella cheese, chopped kalamata olives, chopped roasted red peppers, crumbled feta cheese, shredded chicken, and a little more mozzarella. Sprinkle fresh chopped dill on top. Then cover this stack with the second tortilla. Repeat this process until you have assembled four quesadillas in total.
  4. Bake the Quesadillas: Place the baking sheet in the preheated oven and bake for 8 to 10 minutes, or until the cheese is melted and the tortillas are lightly golden and crisp around the edges.
  5. Serve: Carefully transfer each quesadilla to a plate and cut into quarters. Serve immediately accompanied by the chilled tzatziki sauce for dipping, which perfectly complements the savory quesadilla flavors.
