Description
Greek Lemon Potatoes are a deliciously tangy and savory side dish featuring quartered potatoes baked in a zesty lemon, garlic, and olive oil mixture, then finished with crumbled feta cheese and fresh parsley for a burst of flavor and texture.
Ingredients
Potatoes
- 1 pound yellow/butter/yukon gold or russet potatoes, quartered
Seasoning and Sauce
- ½ cup chicken stock
- ¼ cup olive oil
- 4-5 cloves garlic, finely minced
- Juice of 2 lemons (about ¼ cup lemon juice)
- 2 tablespoons Greek seasoning
- ½ teaspoon fresh ground black pepper
Toppings and Garnish
- ½ cup or more crumbled feta cheese
- Fresh chopped parsley, for garnish
Instructions
- Preheat Oven: Preheat the oven to 400 °F (204 °C) to prepare for baking the potatoes.
- Prepare Potatoes: Place the quartered potatoes in an oven-safe casserole dish, ensuring they are evenly distributed for uniform cooking.
- Mix Sauce: In a measuring cup, combine the chicken stock, olive oil, finely minced garlic, lemon juice, Greek seasoning, and freshly ground black pepper. Stir well to blend all the flavors together.
- Add Sauce to Potatoes: Pour the lemon and seasoning mixture over the potatoes in the casserole dish, making sure the potatoes are well coated and some liquid is pooled at the bottom for roasting.
- Bake Potatoes: Place the casserole dish uncovered in the preheated oven and bake for 45 minutes to start softening and infusing flavors.
- Prepare Baking Sheet: Lightly grease a rimmed baking sheet to transfer the potatoes for the final crisping stage.
- Transfer Potatoes: Carefully remove the casserole dish from the oven. Using a slotted spoon, scoop out the potatoes onto the prepared baking sheet, reserving the flavorful cooking liquid in the casserole dish.
- Reduce Oven Temperature: Lower the oven temperature to 350 °F (177 °C) to finish baking the potatoes.
- Crisp Potatoes: Bake the potatoes uncovered on the baking sheet for an additional 20 minutes or until the exterior turns golden brown and crisp.
- Finish and Serve: Remove the potatoes from the oven, place them in a large bowl, and spoon some of the reserved cooking liquid over them (use as much as desired). Sprinkle crumbled feta cheese on top, toss gently to combine, and garnish with fresh chopped parsley before serving.
Notes
- You can use yellow, butter, Yukon gold, or russet potatoes for this recipe depending on your preference.
- The amount of feta cheese can be adjusted to taste; feel free to add more if you like a stronger tangy flavor.
- Greek seasoning typically contains a blend of herbs like oregano, thyme, and rosemary — you can customize it based on what you have on hand.
- For a vegetarian version, substitute the chicken stock with vegetable stock.
- Ensure the potatoes are cut into similar-sized quarters to allow even cooking and crisping.
- If you prefer extra crispy potatoes, you can broil them for 2-3 minutes at the end, watching carefully to prevent burning.
