Description

These Greek Turkey Burgers are a flavorful and healthy twist on a classic burger, packed with fresh spinach, zucchini, tangy feta cheese, and aromatic herbs. Grilled to juicy perfection and served on toasted buns with creamy tzatziki sauce and fresh vegetables, they make a perfect quick and delicious meal for any day.

Ingredients

For the Burgers

  • 1 pound ground turkey
  • 1/2 cup fresh spinach leaves, finely chopped
  • 1/2 cup shredded zucchini, excess moisture squeezed out
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, minced
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon lemon zest
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • Olive oil or avocado oil, for grilling

For Serving

  • 4 hamburger buns, toasted
  • Tzatziki sauce
  • Lettuce leaves
  • Tomato slices
  • Red onion slices

Instructions

  1. Mix the burger ingredients: In a large bowl, combine ground turkey, finely chopped spinach, shredded and drained zucchini, crumbled feta cheese, minced red onion, chopped parsley, lemon zest, garlic powder, dried oregano, kosher salt, black pepper, and crushed red pepper flakes. Mix with your hands thoroughly to evenly distribute all ingredients.
  2. Form the patties: Shape the mixture into four equal-sized patties, each about 1/2 inch thick, ensuring they hold together well for grilling.
  3. Preheat and oil the grill: Heat your grill or grill pan to medium heat and brush the grates or surface with olive oil or avocado oil to prevent sticking.
  4. Grill the burgers: Cook the patties on the preheated grill for about 5 to 6 minutes per side, or until fully cooked. The internal temperature should reach 165°F to ensure they are safe to eat.
  5. Assemble and serve: Place the cooked turkey burgers on toasted buns, then top each with tzatziki sauce, lettuce, tomato slices, and red onion slices. Serve immediately while hot and juicy.

Notes

  • Make sure to squeeze out excess moisture from the shredded zucchini to prevent soggy patties.
  • If you don’t have a grill, you can use a grill pan or skillet over medium heat to cook the burgers.
  • Use a meat thermometer to check for doneness to avoid undercooking the turkey.
  • For extra flavor, marinate the patties with lemon zest and herbs for 30 minutes before cooking.
  • Toast the buns on the grill for a minute or two for added texture and flavor.
