This vibrant Grilled Peach and Burrata Salad combines sweet grilled peaches with creamy burrata cheese, fresh herbs, and a tangy herbed lemon vinaigrette. - 4 peaches or nectarines
- ⅓ cup tomatoes, chopped

- 1 ball burrata cheese
- ¼ cup pistachios (chopped walnuts or almonds can also be used)
Instructions
- Prepare and grill the peaches: Slice the peaches or nectarines in half and remove the pit. Preheat a grill to medium heat. Brush the peach halves lightly with olive oil and season with salt and pepper. Clean the grill grates to prevent sticking. Place the peaches cut side down on the grill and cook without moving for 2-3 minutes per side until grill marks appear and peaches soften. Use a grill-safe spatula to remove and transfer to a plate. Drizzle honey over the warm peaches for sweetness.
- Make the herbed lemon vinaigrette: Finely chop all the fresh herbs (basil, dill, oregano). In a small bowl, combine the herbs with olive oil, red wine vinegar, honey, lemon zest, lemon juice, and minced garlic. Whisk thoroughly to emulsify and blend the flavors.
- Assemble the salad: Allow the grilled peaches to cool slightly, then slice them. Slice the tomatoes. In a large serving bowl or platter, lay down the mixed greens as a bed. Arrange the peach slices and tomatoes over the greens. Tear the burrata cheese into bite-sized pieces and distribute evenly over the salad. Sprinkle the chopped pistachios over the top for a crunchy texture.
- Dress and garnish: Drizzle the prepared herbed lemon vinaigrette evenly over the salad. Add additional honey drizzles on the peaches if desired for added sweetness. Garnish with extra chopped herbs. Finally, generously drizzle the balsamic glaze on top just before serving to add a delicious tangy sweetness. Enjoy immediately.
Notes
- Use ripe but firm peaches or nectarines for best grilling results; very soft fruit may become mushy.
- If you don’t have a grill, a grill pan on the stovetop works equally well for grilling the peaches.
- For a nut-free option, omit the pistachios or substitute with seeds such as pumpkin or sunflower seeds.
- The balsamic glaze adds a lovely finishing touch, but you can substitute with a balsamic reduction or omit if unavailable.
