Ingredients
Crab and Butter Mixture
- 4 bunches of snow crab legs (thawed)
- 8 tablespoons butter (can substitute with plant-based butter)
- 1 tablespoon garlic (minced)
- 1 tablespoon fresh parsley (minced)
- Kosher salt and ground black pepper, to taste
Buns and Serving
- 6 Brioche rolls (regular or gluten-free)
- Fresh lemon wedges, for serving
Instructions
- Prep: Preheat your grill to medium-high heat, about 400-500°F, and make sure the grill grates are clean to prevent sticking.
- Grill Crab: Place the thawed and dried crab legs directly on the hot grill grates. Close the grill lid and cook for 5-7 minutes. Then open the lid, flip the crab legs over, and cook for an additional 4-5 minutes until they are warmed through. Remove carefully from the grill.
- Melt Butter: While the crab is grilling, combine 8 tablespoons of butter, minced garlic, and parsley in a small saucepan. Warm over medium heat on the stovetop until the butter is fully melted and the ingredients are well mixed.
- Toast Rolls: Brush the inside of each brioche roll with some of the garlic-parsley butter mixture. Place the rolls butter-side-down on the grill grates and toast for 30 seconds to 1 minute, then remove and set aside.
- Combine: Crack open the crab legs and remove the meat carefully. Place all extracted crab meat into a large bowl, add 2 tablespoons of the melted butter mixture, and gently toss to coat evenly.
- Make Crab Rolls: Divide the buttery crab mixture evenly among the toasted brioche rolls. Season lightly with salt and pepper, then drizzle additional melted butter on top of each roll for extra flavor.
- Serve: Serve the crab rolls immediately alongside fresh lemon wedges. Squeeze lemon juice over the crab just before eating to add a bright, fresh note.
