Ingredients
Beef Mixture
- 1 pound lean ground beef
- 2-3 cloves garlic, minced
- 1/4 cup low-sodium soy sauce
- 1/4 cup brown sugar
- 1 tablespoon toasted sesame oil
- 1/4 teaspoon ground ginger
- 1/4 teaspoon red pepper flakes
- 8-10 cranks freshly-ground black pepper
- 1 cup shelled edamame
Vegetables and Garnishes
- 1 bell pepper, seeded and diced
- Cooked rice, for serving (optional)
- Chopped green onions, for garnish (optional)
- Sesame seeds, for garnish (optional)
Instructions
- Cook the ground beef and garlic: Warm a large skillet over medium-high heat. Add the lean ground beef and minced garlic. Break up the beef into small crumbles with a spatula and cook, stirring occasionally, until the beef is mostly browned. Drain any excess fat if desired to reduce grease.
- Prepare and add the sauce: While the beef cooks, combine the low-sodium soy sauce, brown sugar, toasted sesame oil, ground ginger, red pepper flakes, and freshly-ground black pepper in a small bowl or liquid measuring cup. Stir well to mix. Pour this mixture into the skillet with the browned beef, stirring to coat evenly. Continue to cook for 1–2 minutes to let the flavors meld.
- Add edamame and combine: Stir in the shelled edamame to the beef mixture, ensuring they are well coated with the sauce. Cook for an additional minute to heat the edamame through.
- Serve with vegetables and garnishes: Remove from heat and serve the savory beef and edamame mixture hot over cooked rice. Add diced bell pepper on the side or mixed in according to preference. Garnish with chopped green onions and sesame seeds for extra crunch and flavor if desired.
Notes
- For a lower-carb option, serve the beef and edamame bowl over cauliflower rice or a bed of leafy greens instead of traditional rice.
- Adjust red pepper flakes to your preferred level of heat or omit for a milder dish.
- Lean ground beef options (90% lean or higher) help reduce excess fat and calories.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
