Description

These Halloween Brownie Cakesicles are a fun and festive dessert perfect for spook-tacular celebrations. Made with rich brownie crumbles bound with chocolate frosting and coated in colorful candy melts, these treats are molded into playful popsicle shapes and decorated with Halloween-themed sprinkles and candies. Easy to customize and perfect for parties, they combine the fudgy decadence of brownies with the whimsy of cakesicles.

Ingredients

Brownie Base

  • 1 box brownie mix (plus required ingredients as per box or use your favorite homemade brownies)
  • ¼ cup chocolate frosting (homemade or store bought, used to bind the brownie crumbles)

Coating and Decoration

  • 3 oz per color melting chocolate or candy melts (colors: white, orange, black, green, purple) or white almond bark
  • Halloween sprinkles
  • Candy eyes
  • Mini candies
  • Cakesicle mold
  • Popsicle sticks

Instructions

  1. Prepare Brownies: Prepare and bake the brownies according to the package instructions or your favorite homemade recipe. Allow them to cool completely to room temperature to avoid melting when combined with frosting.
  2. Crumble and Bind: Crumble the cooled brownies into a large bowl. Add ¼ cup of chocolate frosting and mix well until the mixture holds together like a moldable dough.
  3. Melt Candy Coating: Melt the candy melts or chocolate in a microwave-safe bowl in short bursts, stirring frequently until smooth and fully melted.
  4. Coat Molds: Using a spoon or pastry brush, coat the inside bottom and sides of each cavities in the cakesicle mold with a layer of melted candy melts. This chocolate shell forms the outer coating.
  5. Insert Sticks and Set: Insert a popsicle stick into each mold cavity through the chocolate layer. Refrigerate the mold for 10–15 minutes to allow the chocolate coating to harden.
  6. Fill with Brownie Mixture: Press the brownie and frosting mixture firmly into each mold cavity on top of the set chocolate shell, leaving a small space at the top for sealing.
  7. Seal with Chocolate: Spoon additional melted candy melts over the brownie mixture to seal and cover completely, smoothing the tops with the back of a spoon.
  8. Chill to Set: Refrigerate the cakesicles for an additional 15–20 minutes to allow the outer chocolate shell to harden fully.
  9. Remove from Mold: Gently pop the fully set cakesicles out of the mold once the coating has firmed.
  10. Decorate: Finish by decorating the cakesicles with Halloween sprinkles, candy eyes, mini candies, or drizzle with more melted chocolate to create festive and characterful designs.

Notes

  • Ensure brownies are completely cooled before crumbling to prevent melting the frosting.
  • Use a pastry brush for a more even and thinner chocolate coating layer in the mold.
  • Different colored candy melts can be mixed or swirled for creative effects.
  • Store cakesicles refrigerated in an airtight container for up to 3 days to maintain freshness.
  • Warming the cakesicle mold slightly before unmolding may help release the shapes cleanly.
