Ingredients

Cookie Dough

  • 1/2 cup coconut oil (or melted butter)
  • 2 large eggs
  • 1/2 cup powdered sugar (or confectioners’ sugar)
  • 1 tablespoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • 1/2 teaspoon fine kosher salt
  • 1/2 cup Halloween sprinkles

Decoration

  • Melted dark chocolate (to decorate)


Instructions

  1. Prepare baking sheets: Line 2 small sheet pans with parchment paper to ensure cookies don’t stick and bake evenly.
  2. Mix wet ingredients: In a mixing bowl, combine 1/2 cup coconut oil, 2 large eggs, 1/2 cup powdered sugar, and 1 tablespoon vanilla extract. Use an electric mixer to whisk the mixture until it becomes creamy and well blended.
  3. Add dry ingredients: Scrape down the sides of the bowl, then add 1 ¾ cups all-purpose flour and 1/2 teaspoon fine kosher salt. Mix on low speed until the dough resembles wet sand and crumbly texture.
  4. Incorporate sprinkles and chill: Fold in 1/2 cup Halloween sprinkles gently into the dough. Press the dough together with your hands to form a ball. Place on a pan and refrigerate for 30 to 45 minutes to firm up.
  5. Preheat oven and shape cookies: Preheat your oven to 350°F (177°C). Remove dough from fridge, flatten into a 1/2 inch thick disc. Use Halloween-themed cookie cutters to cut shapes and place them on the prepared sheet pans.
  6. Reuse leftover dough: Gather remaining dough scraps, roll out again to 1/2 inch thickness, and cut more cookies until all dough is used.
