  • 2 small-medium ripe bananas with brown spotting
  • 12 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 810 Nilla wafers, roughly crumbled with your hands
  • 4 tbsp whipped cream


Instructions

  1. Blend the base: In a small personal blender such as a NutriBullet, add the Greek yogurt, one of the bananas, maple syrup, and vanilla extract. Blend until just combined, making sure not to over-blend into a complete liquid; it’s fine if a few small lumps of banana remain for texture.
  2. Slice remaining banana: Slice the remaining banana into thin coins to use in the layering process.
  3. Assemble the pudding jars: In two ~10 oz jars, start with a layer of the blended banana yogurt pudding, followed by a layer of banana coins, then a layer of crushed Nilla wafers. Repeat the layers once more, finishing with whipped cream and a sprinkle of the remaining crushed wafers on top.
  4. Chill or serve immediately: Cover the jars and refrigerate overnight to allow the pudding to thicken and the flavors to meld. Alternatively, you can enjoy it right away without chilling for a fresher, lighter texture.
