Ingredients

Wet Ingredients

  • 3 large eggs
  • 1 cup mashed overripe bananas (about 2 large bananas)
  • ¼ cup real maple syrup
  • 2 tsp pure vanilla extract

Dry Ingredients

  • 1 cup almond flour (spooned & leveled)
  • 1 cup homemade oat flour* (spooned & leveled)
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt

Add-ins

  • 1 cup blueberries (fresh or frozen)

Optional for Oat Flour

  • 1.5 cups rolled oats (to blend into homemade oat flour)


Instructions

  1. Prep the pan and oven: Preheat your oven to 350°F (175°C). Line a bread tin with parchment paper or grease it well to ensure the bread doesn’t stick.
  2. Make homemade oat flour (optional): If using homemade oat flour, place 1.5 cups of rolled oats into a blender and blend until they form a fine flour, about 20 seconds to 1 minute. Then measure out 1 cup of oat flour for the recipe.
  3. Whisk the dry ingredients: In a small mixing bowl, combine the almond flour, oat flour, ground cinnamon, baking powder, baking soda, and salt. Whisk them together until well mixed and set aside.
  4. Whisk the wet ingredients: In a large mixing bowl, whisk together the eggs, mashed bananas, maple syrup, and vanilla extract until fully combined and smooth.
  5. Combine dry and wet ingredients and add blueberries: Pour the dry ingredient mixture into the wet ingredients. Mix gently until just combined to avoid over-mixing. Then carefully fold in the blueberries using a spatula to evenly distribute them without crushing.
  6. Pour batter into prepared tin: Transfer the mixed batter into your prepared bread tin, smoothing the top if desired.
  7. Bake: Place the bread tin in the preheated oven and bake for 50 to 60 minutes. Check doneness by inserting a toothpick in the center; it should come out clean when the bread is done.
  8. Cool completely: Allow the bread to cool fully in the pan before slicing to ensure a clean crumb and avoid a gummy center. Once cool, slice and serve.

Notes

  • You can substitute frozen blueberries for fresh if preferred; just do not thaw before adding to batter.
  • Make sure bananas are very ripe for the best natural sweetness and moisture.
  • To keep the bread moist, store covered at room temperature for up to 3 days or refrigerate for longer freshness.
  • For a nut-free version, replace almond flour with additional oat flour or another gluten-free flour.
  • Homemade oat flour can be skipped by purchasing certified gluten-free oat flour if preferred.
