Description

This Healthy Caramel Popcorn recipe features homemade caramel sauce made with natural nut butters, honey, and maple syrup, tossed with freshly popped popcorn and mixed nuts. It’s a delicious and wholesome snack that combines the crunch of pecans, walnuts, and almonds with the sweet, sticky caramel coating—all made with simple, natural ingredients and no refined sugars.

Ingredients

Popcorn

  • 1.5 tablespoons coconut oil
  • 1/2 cup popcorn kernels

Caramel Sauce

  • 1/4 cup natural crunchy peanut butter
  • 2 tablespoons almond butter
  • 1/2 cup raw honey
  • 1/4 cup pure maple syrup
  • 1/4 teaspoon sea salt

Nuts

  • 2/3 cup chopped pecans
  • 2/3 cup chopped walnuts
  • 1/4 cup chopped almonds

Instructions

  1. Pop the popcorn: Heat a large wok over medium to high heat and add the coconut oil and popcorn kernels. Cover the wok with a lid to trap heat and moisture.
  2. Shake while popping: As the kernels start popping, shake the wok gently every couple of minutes to ensure even cooking and prevent burning.
  3. Remove from heat after popping stops: Once the popping slows and stops, remove the wok from heat promptly to avoid burning the popcorn.
  4. Transfer popcorn: Pour the freshly popped popcorn into a large mixing bowl to prepare for tossing with the caramel sauce and nuts.
  5. Prepare caramel sauce: In a small saucepan over low heat, combine the natural crunchy peanut butter, almond butter, raw honey, pure maple syrup, and sea salt. Whisk continuously until the mixture is smooth and well combined.
  6. Add nuts and half the caramel: Toss the chopped pecans, walnuts, and almonds into the popcorn along with half of the warm caramel sauce, ensuring even distribution.
  7. Mix thoroughly: Using a spatula, mix the popcorn, nuts, and caramel sauce immediately to coat everything evenly. Then drizzle the remaining caramel sauce over the mixture and stir again.
  8. Coat completely: Continue mixing until all the popcorn and nuts are thoroughly coated with the sticky caramel sauce.
  9. Chill to set: Place the coated popcorn mixture into the fridge for about 30 minutes to allow the caramel to harden and set before serving.
  10. Serve or store: After chilling, portion the caramel popcorn into bowls or baggies for snacking or storage.
