These Healthy Frozen Yogurt Granola Bars combine a crunchy oat and nut butter base with creamy vanilla yogurt and fresh berries. Perfect as a nutritious, refreshing snack or light dessert, these bars are naturally sweetened with maple syrup or honey and packed with wholesome ingredients. Ingredients
Granola Base
- 1 ½ cups old fashioned rolled oats (gluten-free if needed)
- ⅓ cup nut butter (almond butter or peanut butter)
- 3 tbsp maple syrup or honey
- 1 tsp pure vanilla extract
- 1 tsp cinnamon
- ½ tsp salt
Yogurt Layer
- 2 cups vanilla yogurt or skyr (such as Siggi’s Vanilla Skyr)
Toppings
- ⅓ cup fresh strawberries, sliced
- ¼ cup fresh blueberries
- ¼ cup raspberries and/or blackberries, halved (optional)
Instructions
- Prep the pan: Line an 8×8” or 9×9” baking dish with parchment paper and set aside to prevent sticking and make it easy to remove the bars after freezing.
- Make the granola base: In a large bowl, combine the rolled oats, nut butter, maple syrup or honey, vanilla extract, cinnamon, and salt. Mix until all ingredients are well incorporated. Transfer the mixture to the lined baking dish and press it down firmly using a spatula or your hands to form an even, compact layer. Ensuring it’s packed tightly will help the bars hold together after freezing.
- Add the yogurt layer: Spread the vanilla yogurt or skyr evenly over the granola base layer. Use the back of a spoon or a spatula to smooth the surface, creating a uniform topping that will freeze evenly.
- Add toppings: Scatter the sliced strawberries, blueberries, raspberries, and/or blackberries over the yogurt layer, distributing them evenly for balanced flavor and texture in every bar.
- Freeze: Place the assembled dish in the freezer for at least 2–3 hours, or until the yogurt layer is fully set and the bars are firm to the touch.
- Slice and serve: Remove from the freezer and allow the bars to sit at room temperature for 5–10 minutes to soften slightly. Then cut into squares with a sharp knife. Serve immediately chilled. Store any leftovers in an airtight container in the freezer for up to one week.
