Filling

  • Zest from 1 lemon
  • 1 cup whipping cream (minimum 35% fat), chilled

Instructions

  1. Prepare the base: Blend the instant oats, pecans, and honey together in a food processor until you achieve a semi-fine mixture. Divide this mixture evenly into 5 individual cups and set aside.
  2. Make the filling: In a large bowl, whisk the room temperature cream cheese and erythritol together using a handheld whisk until the mixture is fluffy. Add the lemon juice and lemon zest, mixing thoroughly to combine. Set this mixture aside.
  3. Whip the cream: In a separate bowl, whisk the chilled whipping cream with a handheld whisk until stiff peaks form. This will add lightness and volume to your cheesecake filling.
