Ingredients
Peanut Butter Mixture
- 1/2 cup peanut butter (creamy, unsweetened)
- 1 Tbsp honey
- 1/2 cup + 1 Tbsp almond flour
Other Ingredients
- Approx. 48 pretzel twists (plain or salted)
- 1/2 cup dark chocolate chips
Instructions
- Prepare Baking Sheet: Line a medium-sized baking sheet with parchment paper to prevent sticking and make cleanup easy.
- Mix Peanut Butter and Honey: In a large mixing bowl, combine the peanut butter and honey, stirring until the mixture is smooth and well blended.
- Add Almond Flour: Gradually add 1/2 cup plus 1 tablespoon of almond flour to the peanut butter mixture, stirring until it resembles a soft cookie dough. Adjust consistency by adding more almond flour if too runny, or more peanut butter if too crumbly.
- Assemble Pretzel Bites: Scoop approximately 1 teaspoon of the peanut butter mixture onto one pretzel twist. Sandwich it with a second pretzel, gently pressing to seal. Remove any excess peanut butter from the edges and return it to the bowl. Repeat this until all the mixture is used, placing each assembled bite on the lined baking sheet.
- Melt Chocolate: Place the dark chocolate chips in a small ramekin or bowl and microwave in 30-second intervals, stirring after each, until fully melted and smooth, about 2 minutes maximum.
- Dip Pretzel Bites: Dip one half of each peanut butter-stuffed pretzel bite into the melted chocolate. Place the dipped bites back on the baking sheet.
- Set Chocolate: Refrigerate the baking sheet with the dipped pretzel bites for about an hour to allow the chocolate to harden before serving or storing.
Notes
- Servings: Makes approximately 24 pretzel bites, but quantity may vary depending on pretzel size and amount of peanut butter filling.
- Storage: Store in an airtight container in the refrigerator for up to 2 weeks. To prevent sticking, place parchment paper between layers of pretzel bites.
- Recipe Modifications: Swap peanut butter with almond butter if preferred. Chocolate is optional and can be omitted for a simpler version. Use gluten-free pretzels and certifications on ingredients to make this gluten-free. For a vegan version, replace honey with maple syrup and use vegan chocolate chips.
