Description
This Herb Butter Filet Mignon recipe features tender, perfectly seared filet mignon steaks topped with a flavorful homemade herb butter. Using fresh herbs like chives, rosemary, and parsley combined with garlic salt and black pepper, this dish promises a rich and savory experience. Ideal for a special occasion or a gourmet dinner at home, cooking the steaks in a cast iron skillet ensures a beautiful crust while keeping the inside juicy and tender.
Ingredients
For the Herb Butter:
- ½ cup unsalted butter, softened
- 1 tablespoon fresh chives, chopped
- 1 teaspoon fresh rosemary, finely minced
- 1 tablespoon fresh parsley, chopped
- Pinch garlic salt
- Pinch black pepper
For the Filet:
- 2 filet mignon steaks, about 6–8 ounces each
- 2 tablespoons butter
- 3 garlic cloves, minced
- 1 teaspoon garlic salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
Instructions
- Make the Herb Butter: In a small bowl, combine softened butter with chopped chives, minced rosemary, chopped parsley, garlic salt, and black pepper. Mix thoroughly until well blended. Transfer the mixture onto a piece of parchment or plastic wrap, shape into a log, and refrigerate until firm to set.
- Season the Filets: Pat the filet mignon steaks dry with paper towels to promote a good sear. Season both sides evenly with garlic salt, black pepper, and garlic powder to enhance flavor.
- Sear the Filets: Heat 2 tablespoons of butter in a cast iron skillet or heavy-bottom pan over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Carefully place the steaks in the skillet and sear each side for 3–4 minutes for medium-rare, or adjust timing based on your preferred doneness.
- Finish with Herb Butter: Remove the steaks from the skillet and allow them to rest for 5 minutes to retain their juices. While resting, place a generous slice of the chilled herb butter on top of each steak to melt and infuse the meat with fresh herb flavors.
Notes
- Use a cast iron skillet for the best sear and excellent heat retention.
- Allow the steaks to rest after cooking to ensure they remain juicy and tender.
- Make extra herb butter — it pairs beautifully with baked potatoes, roasted vegetables, or as a spread for warm bread.
