Instructions

  1. Warm the Eggs: Place the uncracked eggs in a bowl covered with about 1 cup of warm tap water (comfortably warm but not hot) and let sit for 10 minutes to bring them to room temperature.
  2. Preheat and Prepare Pan: Preheat the oven to 450°F (230°C) and position the oven rack in the bottom slot. Grease a 12-cup standard muffin pan thoroughly, including the areas between the cups to prevent sticking of the popovers’ tops.
  3. Mix Wet Ingredients: Crack the warmed eggs into a large bowl. Add the lukewarm milk and salt, then whisk until fully combined.
  4. Add Dry Ingredients and Seasoning: Add the flour and your preferred seasoning all at once to the egg mixture. Whisk until the batter is frothy with small bubbles visible on the surface. Some small lumps in the batter are acceptable. The batter will be thin.
  5. Incorporate Butter Quickly: Stir in the melted unsalted butter quickly to maintain the frothiness of the batter.
  6. Fill the Muffin Cups: Transfer the batter to the prepared muffin pan, filling each cup about two-thirds full to allow room for rising.
  7. Bake at High Heat: Bake the popovers for 20 minutes at 450°F without opening the oven door to ensure proper rise.
