Ingredients
Bread
- 1 baguette
- 3 tbsp extra virgin olive oil (for drizzling)
Tomato Bruschetta
- 5 roma tomatoes, seeds removed and diced
- 2 cloves garlic, minced
- 10 basil leaves, chopped
- 1 tbsp grated parmesan cheese
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp extra virgin olive oil (included in total 3 tbsp, used here)
Herbed Ricotta
- 1 1/2 cup full fat ricotta cheese
- 2 tbsp parsley, finely chopped
- 2 tbsp chives, finely chopped
- 2 scallions, finely chopped
- 1 tsp salt
- 1 tsp black pepper
Garnish
- Additional fresh basil leaves, for garnish
Instructions
- Prepare the Tomato Bruschetta: In a mixing bowl, combine the diced roma tomatoes, minced garlic, chopped basil, grated parmesan cheese, 1/2 teaspoon salt, 1/2 teaspoon black pepper, and olive oil. Toss gently until all ingredients are well incorporated. Set aside to allow flavors to meld.
- Prepare the Herbed Ricotta: In a separate bowl, mix together the ricotta cheese with finely chopped chives, parsley, scallions, 1 teaspoon salt, and 1 teaspoon black pepper until evenly combined. Set aside.
- Preheat Oven and Slice Baguette: Preheat your oven to 425°F (220°C). Slice the baguette diagonally into 1/2 inch thick slices for an elegant presentation.
- Toast the Baguette Slices: Arrange the sliced baguette on a baking sheet lined with parchment paper. Drizzle the slices with olive oil, ensuring they are lightly coated. Bake in the oven for about 7 minutes or until the bread becomes lightly golden and crisp. Remove from oven and cool for 5 minutes.
- Assemble the Bruschetta: Spread a generous layer of the herbed ricotta mixture onto each toasted baguette slice. Top each with a spoonful of the prepared tomato bruschetta mixture.
- Garnish and Serve: Garnish each bruschetta with additional fresh basil leaves for an aromatic finish. Serve immediately to enjoy the crisp bread and fresh toppings at their best.
