Description

A refreshing and creamy herby cottage cheese dip combining the cool crunch of cucumber with a blend of fresh herbs and garlic for a flavorful snack or appetizer.

Ingredients

Dip Base

  • 1 cup (230 grams) large curd cottage cheese
  • 1 tablespoon extra virgin olive oil
  • 1/2 tablespoon lemon juice
  • 1 clove garlic, minced

Fresh Ingredients

  • 1/2 medium cucumber
  • 1-2 tablespoons chopped fresh herbs (tarragon, chives, dill, mint, cilantro, parsley, etc.)

Seasoning

  • Kosher salt to taste

Instructions

  1. Prepare the cucumber: Cut the cucumber lengthwise and gently scrape out the seeds with a spoon to avoid excess water in the dip.
  2. Grate and drain cucumber: Using the large holes of a box grater, grate the cucumber. Then, wrap the grated cucumber in a clean kitchen towel and squeeze tightly to remove as much moisture as possible. Set aside.
  3. Blend cottage cheese mixture: In a food processor, combine the cottage cheese, extra virgin olive oil, lemon juice, and minced garlic. Blend until smooth and creamy to create the dip base.
  4. Combine ingredients: Transfer the blended cottage cheese mixture to a bowl. Stir in the prepared, drained cucumber and your choice of chopped fresh herbs until evenly distributed.
  5. Season the dip: Taste the mixture and season with kosher salt to your preference, ensuring balanced flavor.
  6. Serve or chill: Enjoy the dip immediately or refrigerate for 30 minutes to let the flavors meld together for a more enhanced taste.

Notes

  • Use fresh herbs of your choice or combination to customize the flavor.
  • Removing excess moisture from the cucumber prevents the dip from becoming watery.
  • This dip pairs well with fresh vegetables, crackers, or as a spread on sandwiches.
  • Refrigeration enhances flavor blending but is optional if serving immediately.
  • For a smoother dip texture, ensure thorough blending of the cottage cheese base.
