Description

This homemade apple pie filling is a warm, spiced mixture of tender cooking apples simmered with cinnamon, nutmeg, and vanilla for a classic dessert flavor. It’s an easy stovetop recipe that yields a delicious filling perfect for pies, tarts, or as a topping for pancakes and ice cream.

Ingredients

Filling Ingredients

  • 3 tablespoons unsalted butter
  • ½ cup light brown sugar
  • ¼ cup granulated sugar
  • 2 teaspoons ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • 5 cooking apples, peeled, cored, and cut into cubes
  • 1 tablespoon lemon juice
  • pinch of salt
  • ½ cup water
  • 2 tablespoons water
  • 2 teaspoons pure vanilla extract
  • 1 tablespoon cornstarch

Instructions

  1. Prepare Apples: Peel, core, and chop the apples into cubes. Drizzle them with lemon juice to prevent browning and enhance flavor.
  2. Melt Spices and Butter: In a large skillet or pan, add the unsalted butter along with ground cinnamon and ground nutmeg. Melt over medium heat to release the spices’ aroma.
  3. Add Apples and Sugars: Add the chopped apples, light brown sugar, granulated sugar, ½ cup water, and vanilla extract to the pan. Stir everything together to combine evenly.
  4. Cook Apples: Cover the pan and cook over medium heat, stirring occasionally, for about 6 to 7 minutes or until the apples begin to soften but still hold their shape.
  5. Prepare Thickener: In a small bowl, mix the cornstarch with 2 tablespoons of water until smooth to create a slurry.
  6. Thicken Filling: Pour the cornstarch mixture into the cooked apples while stirring continuously to prevent lumps.
  7. Simmer to Bubble: Continue to cook the apple mixture until it bubbles and thickens, about 2 minutes. Remove from heat and allow to cool slightly.
  8. Store or Serve: Use the filling immediately for pies or desserts, or store it in the refrigerator for later use.

Notes

  • Use firm, cooking apples like Granny Smith or Braeburn for best texture and flavor.
  • Lemon juice not only prevents apple browning but also balances sweetness.
  • The filling can be made ahead and refrigerated for up to 3 days.
  • For a gluten-free version, cornstarch is a perfect thickener alternative to flour.
  • Add a pinch of salt to enhance overall flavor balance.
