This Homemade Cinnamon Crunch Granola is a delightful and crunchy breakfast or snack option packed with nuts, seeds, oats, and warm cinnamon spice. Sweetened naturally with maple syrup and brown sugar, it’s baked to golden perfection, then tossed with dried cranberries for a chewy, fruity contrast. Perfect for topping yogurt, enjoying with milk, or munching on its own.


Ingredients

Nuts and Seeds

  • 3/4 cup whole almonds
  • 1/2 cup whole hazelnuts
  • 1/3 cup sunflower seeds
  • 1/3 cup pepitas/pumpkin seeds

Dry Ingredients

  • 2 1/2 cups rolled oats
  • 1 tablespoon cinnamon
  • 1/2 – 1 tsp fine sea salt
  • Optional: pinch of nutmeg

Wet Ingredients

  • 1/4 cup flavorless oil (vegetable oil recommended)
  • 1/4 cup brown sugar
  • 1/3 cup maple syrup (plus a little extra for love)
  • 1/2 teaspoon vanilla extract

Finishing

  • 3/4 cup dried cranberries


Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.
  2. Combine Nuts, Seeds, and Oats: In a large mixing bowl, stir together the whole almonds, hazelnuts, sunflower seeds, pepitas, and rolled oats. Set this dry mixture aside.
  3. Mix Wet Ingredients: In a separate bowl, whisk together the vegetable oil, brown sugar, maple syrup, vanilla extract, cinnamon, salt, and the optional nutmeg if you choose to use it. This mixture will coat and sweeten the granola.
  4. Combine and Spread Mixture: Pour the wet mixture over the dry oat and nut mixture. Stir well to ensure everything is evenly coated. Spread the mixture into an even layer on the prepared baking sheet, making sure the clusters are touching. Press down firmly with the back of a spatula to help form chunks.
  5. Bake and Flip: Bake in the preheated oven for 12-15 minutes. Remove, stir the granola to flip it, and press down firmly again with the spatula to encourage cluster formation. Return to the oven and bake for an additional 10-12 minutes until the granola is slightly golden and dry.
  6. Cool and Add Cranberries: Once baked, place the baking sheet on a cooling rack if available. Let the granola cool completely on the sheet to help it harden and stick together to form clusters. After cooling, break apart the granola and stir in the dried cranberries.
  7. Store: Transfer the granola to an airtight container to keep it fresh. Enjoy as a snack, cereal topper, or with yogurt.
