Instructions

  1. Combine dry ingredients: In a large mixing bowl, stir together the all-purpose flour, kosher salt, and baking powder using a wooden spoon until well incorporated.
  2. Add wet ingredients: Pour in the extra-virgin olive oil and warm water, then stir the mixture until the dough comes together and forms a sticky mass.
  3. Form dough rounds: Transfer the dough to a lightly floured surface. Knead the dough for a few minutes using your fists until it becomes smooth. Divide the dough into eight equal portions and roll each into a ball. Place the dough balls on a parchment-lined baking sheet.
  4. Let dough rest: Cover the dough balls with a clean kitchen towel and allow them to rest at room temperature for about 30 minutes. This resting period helps the dough relax and makes it easier to roll out.
  5. Roll out dough: Lightly flour a clean surface such as a baking mat or wooden board. Using a rolling pin, roll each dough ball into a thin circle or an approximate round shape, depending on your preference for thickness.
  6. Cook tortillas: Heat a large cast iron skillet over medium-high heat until very hot. Carefully transfer each rolled-out tortilla to the dry skillet and cook for about one minute on one side until spots of golden brown appear and air pockets form. Flip and cook the other side for about another minute. Repeat with remaining tortillas, optionally using two skillets simultaneously to save time.
  7. Remove tortillas: Transfer cooked tortillas to a clean kitchen towel to keep warm and soft. Serve immediately for best flavor and texture, though they can be stored wrapped for later use.
