Ingredients

Strawberry Syrup

  • 4 cups strawberries, chopped
  • 1/2 cup honey
  • 2 tablespoons water

Cold Foam

  • 2 tablespoons milk
  • 1-2 tablespoons heavy cream
  • 2 tablespoons strawberry syrup


Instructions

  1. Make the strawberry syrup: In a small pot, combine chopped strawberries, honey, and water. Heat the mixture over medium heat until it starts bubbling. Once boiling, reduce the heat to a simmer and cook for 7-10 minutes, stirring occasionally, until the strawberries become soft and mixture thickens slightly. Remove from heat and let it cool for 10 minutes. Strain the syrup through a fine mesh sieve into a jar or bottle to remove solids. Store the syrup in the refrigerator until ready to use.
  2. Prepare the cold foam: In a tall jar or glass, combine the milk, heavy cream, and 2 tablespoons of the prepared strawberry syrup. Use a milk frother to whip the mixture into a light and fluffy foam. Adjust the amount of heavy cream as needed to reach your desired thickness.
  3. Assemble the strawberry matcha drink (optional): In a tall glass filled with ice, add 1-2 tablespoons of the strawberry syrup as a base. Pour about 6 ounces of your milk of choice and brewed matcha over the syrup. Finally, top the drink with the freshly made strawberry cold foam.
