Description

This Honey Banana Bread recipe offers a moist, flavorful loaf sweetened naturally with honey and ripe bananas. Perfect for breakfast or a satisfying snack, it combines the richness of melted butter with warm cinnamon and vanilla, baked to golden perfection in an easy-to-follow method.

Ingredients

Wet Ingredients

  • ½ cup unsalted butter (melted and cooled)
  • ½ cup Local Hive™ Clover Raw and Unfiltered Honey
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 1½ cups overripe bananas (mashed)

Dry Ingredients

  • 2 cups all-purpose flour (weighed in grams or spooned and leveled)
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Grease an 8-9 inch loaf pan using nonstick spray and line it with parchment paper, allowing the sides to hang over for easy removal after baking.
  2. Mix wet ingredients: In a large bowl, whisk together the melted and cooled butter with honey until fully combined. Then, add the vanilla extract, eggs, and mashed bananas, stirring gently to incorporate all ingredients.
  3. Add dry ingredients: Gradually fold in the flour, baking soda, salt, and cinnamon to the wet mixture. Mix just until the dry streaks disappear, being careful not to overmix to keep the bread tender.
  4. Bake the bread: Pour the batter into the prepared loaf pan, spreading it evenly. Bake in the preheated oven for 55 to 70 minutes, or until a toothpick inserted into the center comes out clean.
  5. Cool and remove from pan: Allow the bread to cool in the pan until it is just warm to the touch. Use the parchment paper edges to carefully lift the bread from the pan. Let it cool completely on a wire rack before slicing.

Notes

  • Make sure bananas are overripe for maximum sweetness and moisture.
  • Room temperature eggs help in better mixing and texture.
  • Do not overmix the batter to avoid dense bread.
  • Honey adds natural sweetness and moisture; adjust amount if you prefer it sweeter or less sweet.
  • This bread keeps well for up to 3 days stored in an airtight container at room temperature or can be frozen for longer storage.
