Ingredients
Dry Ingredients
- 1 cup all purpose flour
- 1/4 tsp kosher salt
- 2 tsp baking powder
- 3 tbsp unsweetened cocoa powder
- 3/4 cup white granulated sugar
Wet Ingredients
- 1/2 cup milk
- 4 tbsp butter, melted
- 2 tsp vanilla extract
Topping Ingredients
- 1/2 cup white granulated sugar
- 1/2 cup brown sugar, lightly packed
- 4 tbsp unsweetened cocoa powder
- 1 1/4 cup boiling water
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan with cooking spray or oil to prevent sticking.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, kosher salt, baking powder, unsweetened cocoa powder, and 3/4 cup of white sugar until fully combined.
- Mix Wet Ingredients: In a separate bowl, whisk together the milk, melted butter, and vanilla extract until smooth.
- Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and stir gently until a thick batter forms with no lumps.
- Pour Batter into Pan: Pour the batter into the prepared baking pan and spread evenly to cover the bottom.
- Prepare Topping Mixture: In another bowl, combine 1/2 cup white sugar, brown sugar, and unsweetened cocoa powder. This will resemble chocolate water, which is expected.
- Add Boiling Water: Carefully pour 1 1/4 cups boiling water into the topping mixture and stir just enough to mix.
- Pour Topping Over Batter: Gently pour the hot chocolate liquid evenly over the batter in the baking pan; do not stir.
- Bake: Carefully place the pan in the preheated oven and bake for 35 minutes. The cake will rise to the top while the fudge sauce bubbles underneath.
- Cool Slightly and Serve: Remove the cake from the oven and let it cool for about 10 minutes to set the pudding layer.
- Serve: Serve warm, optionally topped with whipped cream or a scoop of vanilla or coffee ice cream for extra indulgence.
Notes
- Be sure not to stir after pouring the boiling water topping mixture over the batter, as the pudding layer forms during baking.
- This cake is best served warm to enjoy the contrasting textures of cake and fudge sauce.
- You can substitute dairy milk with any preferred milk alternative if desired.
- For a richer flavor, use high-quality unsweetened cocoa powder.
- Leftovers can be refrigerated and gently reheated before serving.
