Description
Delightful cakesicles are bite-sized cake pops coated in a smooth, crisp candy shell, perfect for parties or special occasions. This recipe guides you through creating a flavorful cake and frosting mixture shaped into pops, dipped or coated with melted candy melts, and decorated to your liking.
Ingredients
Cake and Filling
- 1 (9 x 13 inch) prepared cake, cooled to room temperature
- 1/2 cup frosting (plus up to 1/4 cup additional if needed)
Coating and Decoration
- 24 oz candy melts or melting chocolate (2 bags), plus extra for decorating
- Vegetable shortening (optional, 1/2 – 1 tsp per 1/2 cup of melts to thin chocolate)
- Sprinkles (optional)
- Popsicle sticks
Instructions
- Prepare Cake Filling: Using your hands or a mixer, crumble the room temperature cake into a bowl. Add 1/2 cup frosting and mix thoroughly until the mixture holds together but is not sticky. Add additional frosting one tablespoon at a time if needed to reach the right consistency.
- Fill Molds and Freeze: Pack the cake-frosting mixture firmly into cakesicle molds and freeze for 20-30 minutes to set.
- Melt Chocolate: Melt candy melts according to package instructions. If needed, thin chocolate with vegetable shortening to achieve a consistency thick enough to coat but fluid enough for smooth dipping.
- Dip Cakesicles: Remove frozen cakesicles from molds and quickly dip into melted chocolate, shaking off excess. Insert popsicle sticks if not already in molds. Place dipped cakesicles upright in a styrofoam block or lay on parchment paper to harden.
- Alternate Coating Method – Spreading: Pour about 1 tablespoon melted chocolate into molds and spread evenly around sides, ensuring coverage to top edge. Pop any air bubbles with a toothpick. Chill in fridge 5-10 minutes until hardened.
- Add Filling to Coated Molds: Gently fill molds with about 2 tablespoons cake mixture, avoiding pressure that cracks the chocolate. Insert popsicle sticks carefully. Chill if working slowly to prevent cracking.
- Seal Cakesicles: Add another tablespoon of melted chocolate on top, smoothing over the filling to seal. Repair any cracks by adding warm chocolate around the popsicle stick. Chill to set completely.
- Remove and Decorate: Once hardened, gently remove cakesicles from molds. Decorate with extra melted chocolate or sprinkles as desired. Allow decorations to set before serving.
Notes
- Room temperature cake ensures frosting mixes evenly without melting.
- Add frosting gradually to avoid overly sticky or gooey filling.
- Thinning the chocolate coating with vegetable shortening improves dip consistency.
- Use styrofoam or a silicone mat to support cakesicles while drying.
- Chill coated molds to avoid cracking when adding filling or top chocolate layer.
- Handle cakesicles gently during filling to prevent cracks.
- Decorator sprinkles add festive appeal but are optional.
