  • 24 oz candy melts or melting chocolate (2 bags), plus extra for decorating
  • Vegetable shortening (optional, 1/2 – 1 tsp per 1/2 cup of melts to thin chocolate)

Instructions

  1. Prepare Cake Filling: Using your hands or a mixer, crumble the room temperature cake into a bowl. Add 1/2 cup frosting and mix thoroughly until the mixture holds together but is not sticky. Add additional frosting one tablespoon at a time if needed to reach the right consistency.
  2. Fill Molds and Freeze: Pack the cake-frosting mixture firmly into cakesicle molds and freeze for 20-30 minutes to set.
  3. Melt Chocolate: Melt candy melts according to package instructions. If needed, thin chocolate with vegetable shortening to achieve a consistency thick enough to coat but fluid enough for smooth dipping.
  4. Dip Cakesicles: Remove frozen cakesicles from molds and quickly dip into melted chocolate, shaking off excess. Insert popsicle sticks if not already in molds. Place dipped cakesicles upright in a styrofoam block or lay on parchment paper to harden.
  5. Alternate Coating Method – Spreading: Pour about 1 tablespoon melted chocolate into molds and spread evenly around sides, ensuring coverage to top edge. Pop any air bubbles with a toothpick. Chill in fridge 5-10 minutes until hardened.
  6. Add Filling to Coated Molds: Gently fill molds with about 2 tablespoons cake mixture, avoiding pressure that cracks the chocolate. Insert popsicle sticks carefully. Chill if working slowly to prevent cracking.
