Instructions
- Preheat and prepare pie plate: Heat your oven to 350°F (175°C) and grease a 9-inch pie plate thoroughly to prevent sticking.
- Mix the filling ingredients: In a large bowl, combine eggs, buttermilk, granulated sugar, brown sugar, Bisquick baking mix, melted butter, vanilla extract, lemon zest, lemon juice, and sea salt. Use a mixer to beat the mixture for 20 to 30 seconds until smooth and fully incorporated.
- Pour and bake: Pour the batter into the prepared pie plate. Bake in the preheated oven for 40 to 45 minutes or until the top is golden brown and the center has a slight jiggle. Test doneness by inserting a knife near the center; it should come out mostly clean.
