Ingredients

Pie Filling

  • 4 large eggs
  • 1 ¾ cups buttermilk
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • ½ cup Bisquick baking mix
  • ¼ cup unsalted butter, melted and cooled slightly
  • 2 tsp vanilla extract
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • ¼ tsp fine sea salt

Topping

  • 1 to 2 tbsp powdered sugar (for dusting)
  • Optional: whipped cream and/or fresh berries for serving


Instructions

  1. Preheat and prepare pie plate: Heat your oven to 350°F (175°C) and grease a 9-inch pie plate thoroughly to prevent sticking.
  2. Mix the filling ingredients: In a large bowl, combine eggs, buttermilk, granulated sugar, brown sugar, Bisquick baking mix, melted butter, vanilla extract, lemon zest, lemon juice, and sea salt. Use a mixer to beat the mixture for 20 to 30 seconds until smooth and fully incorporated.
  3. Pour and bake: Pour the batter into the prepared pie plate. Bake in the preheated oven for 40 to 45 minutes or until the top is golden brown and the center has a slight jiggle. Test doneness by inserting a knife near the center; it should come out mostly clean.
  4. Cool and chill: Remove the pie from the oven and place it on a cooling rack for 1 hour. After cooling, chill it in the refrigerator for at least 1 to 2 hours to achieve clean, neat slices.
