Ingredients
Meat Mixture
- 1 lb lean ground beef
- 1 packet taco seasoning (about 2 tablespoons)
- ½ cup salsa
- ½ cup chopped sweet onion
Cheese
- 2 cups shredded cheddar cheese (divided)
Batter
- ½ cup Bisquick baking mix
- 1 cup whole milk
- 4 large eggs
- ½ tsp salt
- ¼ tsp black pepper
Toppings
- Shredded iceberg lettuce
- Chopped cilantro
- Sour cream
- Salsa
- Chopped tomatoes
Instructions
- Preheat Oven: Preheat oven to 350°F. Grease a 9-inch pie plate to prevent sticking.
- Cook Beef and Onions: In a skillet over medium heat, cook ground beef and chopped sweet onions until beef is fully browned and cooked through. Drain any excess fat to keep the dish from being greasy.
- Season the Beef: Stir in taco seasoning and ½ cup salsa with the cooked beef and onions. Allow the mixture to simmer for 2 minutes to blend flavors thoroughly.
- Assemble Beef Layer: Spread the beef mixture evenly in the bottom of the prepared pie plate. Sprinkle 1 cup of shredded cheddar cheese evenly over the beef layer.
- Prepare the Batter: In a mixing bowl, whisk together Bisquick baking mix, whole milk, eggs, salt, and black pepper until smooth and well combined.
- Pour Batter Over Beef: Pour the batter evenly over the beef and cheese layer in the pie plate. Then sprinkle the remaining 1 cup of shredded cheddar cheese on top.
- Bake the Pie: Place the pie in the preheated oven and bake for 35 to 40 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.
- Cool and Serve: Allow the pie to cool for 5 minutes before slicing. Serve with shredded iceberg lettuce, chopped cilantro, sour cream, extra salsa, and chopped tomatoes for garnish and added flavor.
Notes
- For extra flavor, add a few dashes of hot sauce to the beef mixture before baking.
- You can substitute ground turkey or chicken for a leaner protein option.
- Make sure to drain excess fat after cooking the beef to avoid a greasy pie.
- If you prefer a spicier pie, increase the taco seasoning slightly or add diced jalapeños.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
