Description

Delight in these Individual Fruit and Brownie Trifles, a luscious dessert featuring layers of rich homemade brownies, fresh raspberries, and fluffy whipped cream infused with sour cream and vanilla. Perfect for serving at gatherings or as an indulgent treat, these trifles combine the deep flavors of chocolate with bright berries and creamy textures for a harmonious and crowd-pleasing recipe.

Ingredients

Brownies

  • 7 ounces unsweetened chocolate, roughly chopped
  • 3/4 cup unsalted butter
  • 1/4 cup water
  • 1 cup sugar
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1/8 teaspoon salt

Fruit

  • 2 pints raspberries

Whipped Cream Topping

  • 1 1/2 cups chilled heavy cream
  • 1/3 cup sour cream
  • 3 tablespoons sugar
  • 2 teaspoons vanilla extract

Garnish

  • Mini chocolate chips, for garnish

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 350ºF. Grease a 9-inch baking dish with cooking spray and set it aside to prepare for the brownie batter.
  2. Make the Brownie Batter: In a medium saucepan set over medium-low heat, combine the chopped unsweetened chocolate, unsalted butter, and water. Stir continuously until both chocolate and butter are fully melted and smooth. Transfer this melted mixture to the bowl of a stand mixer fitted with the paddle attachment. Add the granulated sugar and light brown sugar, mixing until well combined. Then, add the eggs and vanilla extract and mix on medium speed for about 2 minutes to achieve a smooth batter.
  3. Add Dry Ingredients and Bake: Gradually add the all-purpose flour and salt to the wet ingredients, mixing until just combined to avoid overmixing. Pour the batter into the prepared baking dish and bake in the preheated oven for 25 to 30 minutes. Check doneness by inserting a toothpick into the center; it should come out clean. Once baked, remove from oven and cool completely on a cooling rack.
  4. Prepare Brownie Croutons: Once the brownies have cooled, invert the pan onto a cutting board and carefully remove the brownies. Slice into 1/2-inch squares to create brownie croutons for layering in the trifles.
  5. Make the Whipped Cream: In a separate bowl, use a stand mixer fitted with the whisk attachment to whisk together the chilled heavy cream, sour cream, sugar, and vanilla extract. Whip on high speed until soft peaks form, indicating a smooth and fluffy texture perfect for layering.
  6. Assemble the Trifles: In individual serving dishes, alternate layers beginning with brownie croutons, followed by a generous spoonful of whipped cream, then a layer of fresh raspberries. Continue layering until the serving dish is filled, finishing with whipped cream on top.
  7. Garnish and Serve: Sprinkle mini chocolate chips over the top of each trifle to garnish. Serve immediately to enjoy the contrast of textures and flavors at their freshest.

Notes

  • Ensure the brownies are completely cooled before cutting to prevent crumbling.
  • Chill the heavy cream and bowl before whipping for best results.
  • Use fresh raspberries for the juiciest and most vibrant flavor; substitutions like strawberries or blueberries can be used depending on availability.
  • If desired, prepare brownies a day ahead and refrigerate for convenience.
  • To make the dessert nut-free, verify that chocolate chips and other ingredients contain no nuts.
